    SALUMI 
Available at the Farmers’ Market (Our Salumi are curing and will be available at differing times through the season. We will notify our customers when each Salumi is available via our website.



Soppressata Siciliano:
 
A rustic salame with red chile, garlic, toasted fennel and red wine.



 


Soppressa da Veneto: 
A fine-grained salame laced with the classic spices of Venice.

Salametti Sienese: 
A pure salame flavored only with a touch of garlic and peppercorns.

Coppa Romana: 
A Roman-inspired coppa flavored with garlic, fennel and lemon zest.





Coppa Rossa: 
A Spanish style coppa infused with pimenton de la vera and Chimayo chile.

Coppa Moro:
Mark's tribute to Ben's Moroccan roots: a coppa flavored with ras-al-hanout - a secretive blend of 13 spices.

Salami Citta:
A pure celebration of Burkshire pork. Simply flavored with garlic, black pepper and touch of white wine.

Guanciale:
A Roman specialty. Highly spiced with red pepper flakes, brown sugar, black peppercorns and rosemary.


 

Pancetta Rigatino:
A northern Italian version, cured flat with cinnamon & garlic.





Salametti Picannte:
An authenic take on the American version of "pepperoni".

Salamino Calabrese:
A southern Italian salami inspired by the area of Calabria. 3 types of Chile & a splash of red wine.

 

    SALSICCIA
(Fresh Italian Sausage): - Available NOW at the Farmers' Market! 

 
Fiama:
A spicy fresh sausage with notes of fennel, pepper, and smoked Spanish paprika.

Bolognese:
A “mild” fresh sausage with hints of Northern Italian spices such as cinnamon and nutmeg.

Mostarda:
Best described as an Italian Chutney. Perfectly matched with rich meat and spicy flavors. It can be used as a sandwich spread (with your favorite Salume Beddu salami), or a spread for crackers and the perfect sheep's cheese.

Cannellini alla Toscana (White Bean Puree):
Slow-braised Cannellini beans, simmered with rosemary and garlic. Perfect for your upcoming dinner party. Our Cannellini alla Toscana is wonderful served on bruschetta and garnished with fresh herbs. 
 

Caponata:
An amazing blend of eggplant, tomatoes, golden raisins and pine nuts, perfectly prepared into a high quality Caponata. Great by itself or paired with our wonderful Croccantini.

Sott' Aceto:
Literally meaning "under vinegar" in Italian, this relish is perfect with our Bologonese Salsiccia, or firm fish. Many use it as a wonderful vinaigrette to their pasta  or salads. Perfect for the fresh tastes of summer.

Croccantini:
"Italian Wine Crackers". These are addictive. They are amazing by themselves or with any number of our sides. Just try to stop eating them....
